'My friend Christine joined me at Studio 5 (NBC affiliate studios) to show us her favorite Chickpea Salad Recipe. It\'s yummy, easy to make, and healthy! I\'ll type the recipe below. Chickpeas or garbanzo beans are one of my favorite legumes to use as an ingredient in so many different recipes. This chickpea salad sandwich vegetarian recipe is so easy to make in just minutes, and you don\'t even need to know how to cook to make it. Chickpeas are a great source of vegan protein and are perfect for those looking to increase their protein intake while eating vegan or vegetarian recipes. Chickpea Salad Ingredients needed: 1 (15 oz) can chickpeas, drained and rinsed 1/2 cup finely chopped celery (about two stalks) 2 Tbsp. finely chopped red or green onion 1/4 cup finely chopped red bell pepper 2-3 Tbsp. mayonnaise (or Veganaise or your choice of oil) 1 clove garlic, minced 1 1/2 tsp. minced dill 1/4 tsp. fine-grained sea salt black pepper to taste In a large bowl, mash the chickpeas until flakey in texture. Stir in celery, onion, pickles, bell peppers, mayo, and garlic. Combine well. Add the mustard and dill. Adjust seasonings to taste. Serve as a sandwich, salad, or on crackers. Store in refrigerator for up to 3 days.
